At ORTSAG, we believe in making a positive impact on the planet while serving up delectable delights. We've embraced a zero-waste philosophy that extends from our kitchen to your plate. Leftovers from the raw materials used for compositions on the CTC's ghost menu here create dirty delights, tempting you to get messy and discover their disruptive flavour.
Minimum Food Waste
The menu at ORTSAG is divided into two categories. In one category, the sustainable, you will find daily dishes that utilize surplus ingredients from the CTC kitchen. The other category on the menu at ORTSAG is the burgers, featuring five different proposals that differ from what we have tried until today.
Have you ever wondered about what sustainability actually means?
Well, apart from being a trend of the times, this word is rendered as: “Sustainable development which meets the needs of today without prohibiting future generations from having the same wants. “ It's truly shocking that 37% of the world's carbon emissions come from food, and an even more resounding bell for us is that of that, 1/3 of it ends up in the trash.
So CTC, taking its share of responsibility, looking at tomorrow, creates its own food chain and exchanges ideas with ORTSAG every day, making sure to stimulate the idea of nose to tail gastronomy.
The logic of reducing waste through the full exploitation of a product rather than the selective use of only the most expensive cuts.
